the perfect popcorn

Second helpings of “cheesy” popcorn!
It was a rainy day. I promised the girls if it was raining after camp we would run outside in our bare feet and do a rain dance. But by the time I picked them up the rain had stopped, so our plan was kiboshed. Instead we did the second-best rainy day activity: made a fort, popped some popcorn and watched a movie (How to Train Your Dragon).
I bought a bag of Passion Popcorn kernels at The Stop Farmers’ Market from Nature’s Way Organics. They have a foolproof technique for popping the
perfect corn on the stove top:
Heat 3 tbsp olive oil on high heat in a large pot with a lid. Place 3 kernels into the pot. When the kernels pop, add 1/4 cup Passion Popcorn kernels and 1/2 tsp fine sea salt. Remove from heat and count to 30 or so – this will condition the kernels. Return to heat and shake the pot (remember to wear kitchen gloves).
They recommend melting 2 tbsp organic butter and distributing it in the popcorn. Instead, we like to sprinkle some “cheese” (aka nutritional yeast;
we use Bob’s Red Mill) on it. And there you have it, a healthy, movie-theatre-worthy snack! And a perfect rainy day afternoon with my girls.
