Combine diced tomatoes, diced red onion and finely chopped jalapeno peppers (start with 2 and take it from there).
Oops! Forgot about the minced garlic.
Mash 6 large avocados. Add some freshly squeezed lime juice. Season with coarse salt and fresh ground pepper to taste.
Lovingly combine the “salsa” mix with the avocado.
Add a handful of chopped fresh cilanto. Mmmmm!

Today a mysterious box wrapped in brown paper arrived at our doorstep.
It was addressed to Lily. We tore it open and out popped one of our new favourite snacks…in five different flavours!
Popchips are not made with any gluten ingredients but they used to be
manufactured on equipment shared with wheat. Not anymore! In August 2011 they were officially certified by the Gluten-Free Certification Organization, a program of the Gluten Intolerance Group (aka GiG). The company is in the
process of changing over its packaging to include the GF symbol, so there’s a chance you might find bags that don’t have the symbol printed on them. Popchips says that if a bag has a “best by” date of August 2012 or later, they’re definitely gluten free. As always, be sure to check the labels and ingredients. Munch on!
Get thee to the Greek

salad for a leisurely lunch on the dock. It packs a little sweet, a little salty and a big punch of protein with tuna, chickpeas and feta. After her first mouthful,
Alison declared me “the queen of salads.” Now you can be queen, too.
We celebrated Canada Day with this colourful corn salad. With fresh corn and peaches, every bite tastes like summer.
Fennel, peach and sunflower seeds
This crunchy salad was inspired by my dear friend Debbie (aka Bella). It’s all hers, with a couple of additions that were calling out to me. Debbie worships Giada, can effortlessly whip up a gourmet meal and gets pleasure from feeding the people she loves. And she loves to eat good food.
Reason #26 I love Bella: ECHOage. She and her business partner, Alison, have changed the face of birthday parties with ECHOage – an online birthday party service where children learn the value of giving and receiving while celebrating. If you haven’t heard of it and you have kids, it’s your lucky day. Trust me, it’s so good it’s become a verb (as in, “I ECHOaged Lily’s party”). This year, for Lily’s 6th birthday, she got to pick the charity of her choice from the ECHOage website. She chose WWF-Canada (World Wildlife Fund Canada)
because “I love nature and I love animals.” Half of the money that her party guests (well, their parents) contributed online went to WWF-Canada and the other half went to a Razor scooter with pink handlebars and some charms for her charm bracelet. Lily felt good about making a difference and she feels good riding her scooter. And I feel proud of her.
